šŸ… What to Do with 5 Pounds of Tomatoes

Here are three of my favorite ways to turn a mountain of tomatoes into meals you’ll love:


šŸ… 1. Slow-Roasted Tomato Sauce


Ingredients:

  • 5 pounds fresh tomatoes (any kind), halved or quartered

  • 4–5 cloves garlic

  • Olive oil

  • Sea salt

  • Fresh or dried herbs (basil, oregano, thyme)


How to Make It:

1ļøāƒ£ Preheat oven to 300°F.

2ļøāƒ£ Arrange tomatoes, cut side up, on a baking sheet. Scatter garlic cloves around

3ļøāƒ£ Drizzle generously with olive oil, sprinkle with salt and herbs.

4ļøāƒ£ Roast 2–3 hours, until very soft and caramelized.

5ļøāƒ£ Cool slightly, then blend into a smooth sauce or leave chunky.


How to Use:

  • Toss with pasta or grains.

  • Spoon over roasted veggies.

  • Freeze in jars for winter meals.


šŸ„— 2. Fresh Tomato Salsa


Ingredients:

  • 4 cups diced fresh tomatoes

  • ½ red onion, finely chopped

  • 1 jalapeƱo, minced (optional)

  • ½ cup chopped cilantro

  • Juice of 1–2 limes

  • Sea salt


How to Make It:


1ļøāƒ£ Combine all ingredients in a bowl.

2ļøāƒ£ Stir gently and let sit 10–15 minutes to blend flavors.


How to Use:

  • Serve with chips or tacos.

  • Spoon over salads, bowls, or grilled fish.



šŸ² 3. Simple Tomato Soup


Ingredients:

  • 3 pounds fresh tomatoes, chopped

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 3–4 cups vegetable broth

  • Olive oil

  • Salt and pepper

  • Optional: fresh basil, splash of coconut milk


How to Make It:


1ļøāƒ£ Heat olive oil in a pot. Add onion and garlic, sautĆ© until soft.

2ļøāƒ£ Add tomatoes and cook 5–10 minutes until they start to break down.

3ļøāƒ£ Pour in broth and simmer 20–25 minutes.

4ļøāƒ£ Blend until smooth. Season to taste.

5ļøāƒ£ Swirl in coconut milk or top with basil if you like.


How to Use:

  • Serve warm with crusty bread.

  • Freeze portions for easy meals later.
