🍅 What to Do with 5 Pounds of Tomatoes

Here are three of my favorite ways to turn a mountain of tomatoes into meals you’ll love:
🍅 1. Slow-Roasted Tomato Sauce
Ingredients:
5 pounds fresh tomatoes (any kind), halved or quartered
4–5 cloves garlic
Olive oil
Sea salt
Fresh or dried herbs (basil, oregano, thyme)
How to Make It:
1️⃣ Preheat oven to 300°F.
2️⃣ Arrange tomatoes, cut side up, on a baking sheet. Scatter garlic cloves around
3️⃣ Drizzle generously with olive oil, sprinkle with salt and herbs.
4️⃣ Roast 2–3 hours, until very soft and caramelized.
5️⃣ Cool slightly, then blend into a smooth sauce or leave chunky.
How to Use:
Toss with pasta or grains.
Spoon over roasted veggies.
Freeze in jars for winter meals.
🥗 2. Fresh Tomato Salsa
Ingredients:
4 cups diced fresh tomatoes
½ red onion, finely chopped
1 jalapeño, minced (optional)
½ cup chopped cilantro
Juice of 1–2 limes
Sea salt
How to Make It:
1️⃣ Combine all ingredients in a bowl.
2️⃣ Stir gently and let sit 10–15 minutes to blend flavors.
How to Use:
Serve with chips or tacos.
Spoon over salads, bowls, or grilled fish.
🍲 3. Simple Tomato Soup
Ingredients:
3 pounds fresh tomatoes, chopped
1 medium onion, chopped
2 cloves garlic, minced
3–4 cups vegetable broth
Olive oil
Salt and pepper
Optional: fresh basil, splash of coconut milk
How to Make It:
1️⃣ Heat olive oil in a pot. Add onion and garlic, sauté until soft.
2️⃣ Add tomatoes and cook 5–10 minutes until they start to break down.
3️⃣ Pour in broth and simmer 20–25 minutes.
4️⃣ Blend until smooth. Season to taste.
5️⃣ Swirl in coconut milk or top with basil if you like.
How to Use:
Serve warm with crusty bread.
Freeze portions for easy meals later.
