š My Life with Watermelon: Cool, Sweet, and Always in the Fridge
If you've seen me lately, you know... I've basically become one with the watermelon. š
This time of year, I live for it ā juicy, cold, refreshing slices waiting for me after a walk, a kitchen session, or just to keep me company while I answer emails. I cut up half a watermelon and keep it in the fridge almost every day. It's my version of fast food ā hydrating, sweet, and makes me feel like summer is giving me a hug.
Last week I shared a few of my favorite watermelon drinks and some sweet memories of my dad using watermelon as the only liquid in his juices.
This week, I thought: letās keep the love going and share a few more delicious, super simple, summer-friendly recipes using watermelon in new ways.
Here are three more simple, delicious, and surprising ways to use watermelon this week:
š 1. Watermelon & Avocado Summer Salad
Sweet, creamy, and bright ā this combo is pure joy!
Ingredients:
2 cups cubed watermelon
1 ripe avocado, cubed
Juice of 1 lime
Chopped mint or cilantro
Pinch of sea salt
Toss everything gently and serve chilled. Optional: Add arugula for a peppery bite!
š 2. Watermelon Popsicles
Perfect for kids (or grown-ups) and great for hot afternoons.
Blend together:
3 cups watermelon
Juice of 1 lemon
1 tsp honey or maple syrup (optional)
Pour into popsicle molds and freeze overnight.
š 3. Grilled Watermelon Wedges
Yes, grilled! This one surprises everyone.
How to make it: Slice watermelon into thick wedges. Brush lightly with olive oil and grill for 2ā3 minutes per side. Sprinkle with chili powder or fresh lime zest for a flavor twist!
š Bonus Tip: Freeze chunks of watermelon to use in smoothies instead of ice ā they make any drink extra refreshing and naturally sweet.
