🥬 Sweet Potato Greens: The Leafy Superfood You Didn't Know You Needed

ree

It’s easy to fall in love with sweet potatoes — they’re comforting, versatile, and full of glow-giving nutrients. But here’s the part we often overlook: their gorgeous, vibrant green tops.

If you’ve never cooked with sweet potato greens, I promise you’re about to meet your new favorite summer green. They're silky, mild, earthy, and so easy to love. I call them “spinach’s more elegant cousin” — and they’re so much morethan just compost fodder.

🌿 What Makes Sweet Potato Greens So Amazing?

These tender leaves are rich in:

  • Vitamin A & C for immune support and glowing skin

  • Calcium for bone health

  • Iron for energy and vitality

  • Polyphenols and antioxidants that help fight inflammation

  • Fiber & chlorophyll that nourish your gut and support gentle detox

They’re also easy to grow and thrive in warm weather — so they’re a natural fit for our CSA and a beautiful way to eat in tune with the season.

🧑‍🍳 Easy, Delicious Ways to Use Sweet Potato Greens

Let’s keep it simple and flavorful. Here are three of my go-to recipes that bring out the best in these beautiful greens.

🥬 1. Garlicky Sweet Potato Greens (Quick Sauté)

Ingredients

  • 1 bunch sweet potato greens (stems removed if thick), chopped

  • 2 cloves garlic, thinly sliced

  • 1 tsp olive oil or avocado oil

  • Pinch of sea salt

  • Optional: splash of coconut aminos or tamari

InstructionsHeat oil in a skillet. Sauté garlic for 1 minute until fragrant. Add greens and a splash of water, and stir until wilted (about 2–3 minutes). Season and serve as a side, over rice, or with beans.

🥬 2. Sweet Potato Green & Avocado Wrap

Ingredients

  • 1 cup sautéed sweet potato greens

  • ½ ripe avocado, sliced

  • 1 whole grain or gluten-free wrap

  • Squeeze of lemon

  • Optional: a smear of hummus or a spoonful of salsa

InstructionsLayer everything in a wrap, roll it up, and enjoy! Perfect for a light lunch or a quick grab-and-go meal.

🥬 3. Green Glow Smoothie

Ingredients

  • 1 small handful of raw sweet potato greens (young & tender)

  • 1 banana

  • ½ cup frozen mango or pineapple

  • 1 cup plant milk or coconut water

  • Squeeze of lime juice

InstructionsBlend everything until smooth and bright green. It’s creamy, refreshing, and packed with energy.

💚 Root-to-Leaf Eating is an Act of Love

By choosing to use the whole plant, we honor the full gift of what the Earth gives us. Sweet potato greens are a reminder that nourishment often hides in plain sight — and that sometimes the best superfoods aren’t exotic or expensive… they’re just waiting quietly at the top of your next veggie.

🌿 Thanks for Reading!

I hope this little green love letter inspired you to look at your sweet potato greens in a whole new way. Whether you sauté them, wrap them up, or blend them into a smoothie — you’re giving your body something beautiful and honoring the whole plant in the process.

Let me know if you try any of the recipes — I love hearing how you make them your own. 💚

Stay nourished, stay curious, and I’ll see you at the farm (or in your inbox) soon!
