If you’ve never cooked with sweet potato greens, I promise you’re about to meet your new favorite summer green. They're silky, mild, earthy, and so easy to love. I call them “spinach’s more elegant cousin” — and they’re so much morethan just compost fodder.

🥬 1. Garlicky Sweet Potato Greens (Quick Sauté)
Ingredients
1 bunch sweet potato greens (stems removed if thick), chopped
2 cloves garlic, thinly sliced
1 tsp olive oil or avocado oil
Pinch of sea salt
Optional: splash of coconut aminos or tamari
InstructionsHeat oil in a skillet. Sauté garlic for 1 minute until fragrant. Add greens and a splash of water, and stir until wilted (about 2–3 minutes). Season and serve as a side, over rice, or with beans.
🥬 2. Sweet Potato Green & Avocado Wrap
Ingredients
1 cup sautéed sweet potato greens
½ ripe avocado, sliced
1 whole grain or gluten-free wrap
Squeeze of lemon
Optional: a smear of hummus or a spoonful of salsa
InstructionsLayer everything in a wrap, roll it up, and enjoy! Perfect for a light lunch or a quick grab-and-go meal.

Ingredients
1 small handful of raw sweet potato greens (young & tender)
1 banana
½ cup frozen mango or pineapple
1 cup plant milk or coconut water
Squeeze of lime juice
InstructionsBlend everything until smooth and bright green. It’s creamy, refreshing, and packed with energy.
