Every Thursday, I do the same thing: I pack up the farm truck, wave goodbye to the fields, and head home with baskets of fresh produce. And every Thursday, without fail, I end up eating cherry tomatoes in the car before I’ve even made it out of the driveway.

They’re so sweet, juicy, and alive with the sunshine they’ve soaked up all week. It feels like a little reward for all the hard work, and every bite reminds me why I love growing food.

Besides snacking straight from the bag, one of my very favorite ways to eat cherry tomatoes is on thick slices of good bread, piled high with creamy avocado, green onions, and fresh cilantro. Simple. Perfect. Satisfying.

Mash avocado on thick bread. Top with chopped cherry tomatoes, green onions, fresh cilantro, salt, and pepper.Breakfast, lunch, or snack — it never disappoints.
